Pizza capriccioso is a style of pizza in Italian food ready with mozzarella cheese, Italian baked red meat, mushroom, Cynara scolymus and tomato. Kinds of comestible mushrooms used may include cremini (white mushrooms) and others. Renewed shiitake mushrooms offer a rich and buttery taste that you won't classically get from other mushroom types.

INGREDIANTS: -

Sauté Mushrooms:

  1. Two tablespoons canola or vegetable oil
  2. Half pound maitake mushrooms
  3. Six sprigs picked thyme, leaves
  4. Salt to taste buds

French Onion Mascarpone:

  1. One tablespoon canola or vegetable oil
  2. Half sweet onion, peeled and sliced
  3. Three tablespoons room temperature mascarpone cheese
  4. Two tablespoons room temperature cream cheese
  5. Half tablespoon freshly grated horseradish (or jarred horseradish, drained) 
  6. Half tablespoon finely chopped shallots
  7. Half teaspoon balsamic vinegar
  8. Half teaspoon Worcestershire sauce     
  9. One sprig thyme, leaves picked and chopped 
  10. Salt and crushed black pepper to taste

Pizza:

  1. Half tablespoon canola or vegetable oil
  2. One small ball (about 301 grams) pizza dough (homebased or store-bought)
  3. Half cup grated mozzarella
  4. One fourth cup grated raw milk cheddar 
  5. Half cup grated smoked mozzarella
  6. One third cup sautéed mushrooms
  7. One egg
  8. One fourth cup French onion mascarpone

PREPARATION PROCEDURE: -

Sauté the mushrooms:

STEP NO: - 1

Heat a very large saucepan over high heat and coat the bottom of the pan with oil.

STEP NO: - 2

Once the sauce pan is nearly smoking, add the mushrooms.

STEP NO: - 3

Cook till most of the humidity from the mushrooms is gone and they turn a nice golden brown, about 5-6 minutes.

STEP NO: - 4

Then jesting the mushrooms and cook till golden on the other side, an additional 5-6 minutes.

STEP NO: - 5

Add the fresh thyme and season with salt.

STEP NO: - 6

Get rid of the mushrooms and place them on parchment-lined baking sheet to cool. 

Make the French onion mascarpone:

STEP NO: - 1

Heat the oil in a large saucepan over medium FLAME.

STEP NO: - 2

Add the onions and lower the temperature.

STEP NO: - 3

Gradually cook till the onions have lost their moistness and are a deep golden–amber color.

STEP NO: - 4

This will take roughly 20-30 minutes.

STEP NO: - 5

Mixing irregularly as the onions caramelize.

STEP NO: - 6

Once caramelized, remove from the saucepan and allow to cool.

STEP NO: - 7

Once cool, unevenly chop the onions. In a large bowl, mix the chopped onions together with the rest of the components.

STEP NO: - 8

Check the seasoning and adjust, if essential. 

Prepare the pizza: 

STEP NO: - 1

Pre-heat your oven to 501°F.

STEP NO: - 2

Informally grease an 8 x 8–inch saucepan with oil.

STEP NO: - 3

Spread the dough calmly across the saucepan, making sure that the dough reaches the boundaries of the pan.

STEP NO: - 4

Top the dough with the steady mozzarella and sprinkling the edges with cheddar.

STEP NO: - 5

Top with the burned mozzarella and mushrooms.

STEP NO: - 6

Roast till the pizza begins to brown, about 10-12 minutes.

STEP NO: - 7

Top the pizza with the egg and return to the oven till the egg white is set and the yolk is just runny, about 2-3 minutes.

STEP NO: - 8

Get rid of from the saucepan. Gravy with the French onion mascarpone.

STEP NO: - 9

Cut the pizza in quarters and serve proximately.
