Blueberry Glaze Cake Recipe is one of the best breakfast recipes and many people like to eat in their breakfast. Yellow cake lovers will go nuts over this glassy blueberry cake with a humid, tender crumb. It won’t weigh you down—even if you have two slices—and we’d even claim it’s flawlessly acceptable to eat for breakfast.

Ingredients:

  • One stick or eight tablespoons unsalted butter, at room temperature
  • Two third cup granulated sugar
  • Two large eggs
  • Zest of one lemon
  • One and half teaspoons pure vanilla extract
  • Half cup fine cornmeal
  • One teaspoon baking powder
  • Half teaspoon fine sea salt
  • Two and one third cups all-purpose flour, plus 2 tablespoons
  • Half cup plain Greek yogurt
  • Two cup blueberries
  • One tablespoon lemon juice
  • One and half cups powdered sugar
  • Two tablespoons fresh lemon juice
  • One tablespoon heavy cream

Preparation Procedure:

Step No: - 01

Pre-heat the oven to 350-351°F. Grease a 9-inch cake pan with protected spray.

Step No: - 02

In the bowl of an electronic mixer fitted with the paddle attachment, cream the butter and sugar till light and fluffy, about 5-6 minutes.

Step No: - 03

Enhance the eggs one at a time, then beat in the lemon zest, mixing well to combine. Add the vanilla extract and mixture to combine.

Step No: - 04

Add the cornmeal, baking powder, salt and two and one third cups all-purpose flour; mix to combine. Add the yogurt and mixture to combine.

Step No: - 05

In an average bowl, toss the blueberries with the lemon juice and the remaining two tablespoons flour.

Step No: - 06

Transfer the cake batter into the prepared pan and spread into an even layer. Scatter the blueberries in an even layer over the external of the cake batter.

Step No: - 07

Bake till a tester inserted into the center of the cake comes out clean, 46-55 minutes. Let cool for 15-16 minutes, then gently unmold from the cake pan and let cool totally on a wire rack.

Step No: - 08

In an average bowl, whisk together the powdered sugar, lemon juice and cream. When the cake has chilled, drizzle the decoration all over the cake before serving.
