Ingredients:

  • Four large eggs
  • Two cups sugar
  • One cup canola oil
  • Two cups all-purpose flour
  • Two to three teaspoons ground cinnamon
  • Three fourth teaspoon baking soda
  • Half teaspoon baking powder
  • One fourth teaspoon salt
  • One fourth teaspoon ground nutmeg
  • Two cups grated carrot
  • Half cup butter, softened
  • Three ounces cream cheese, softened
  • One teaspoon vanilla extract
  • 3-3/4 cups candymakers’ sugar
  • Two to three tablespoons 2% milk
  • One cup chopped walnuts, optional
  • Orange and green food coloring, elective

Preparation Procedure:

Step No: - 01

In a big bowl, combine the eggs, sugar and oil, and set aside. In an isolated bowl, mix together the flour, cinnamon, baking soda and powder, nutmeg and salt. Then, a third at a time, stir the dry mixture into the wet mixture till it’s fully combined. Crease in the grated carrot.

Add an old-school touch to your carrot cake by stirring in some raisins, torn coconut, chopped walnuts and or well-exhausted crushed pineapple. Each will give your carrot cake quality and some added sweetness.

You can also substitute half, or all, of the canola oil with an equal quantity of unsweetened applesauce. This swap not only gives your cake some apple flavor but reduces the fat content, too.

After your cake layers have entirely cooled, spread the frosting between the layers and over top and sides of cake.
